Easy peasy replacement for your regular bread, roti canai, or pancakes.

Ingredients:
1 cup atta flour (fine ground wholewheat flour)
1/2 cup all-purpose flour
1/4 tsp salt
1 1/2 tbsp cooking oil
1/2 cup water (use more if needed)
Oil for deep frying

Method:
Mix all dry ingredients together. Add the oil, mix around, then add the water bit by bit, mixing well after each addition, till it forms a soft pliable dough. Don't worry if you have leftover water, and add more if required. Continue kneading dought till smoth, soft and not sticking to the bowl anymore.
Form into balls about the size of a really large marble. Use a rolling pin to flatten to about 1/8th inch discs.
Heat oil till a piece of dough would instantly bubble up when dipped in it.
Drop a disc into the oil, making sure it is immersed completely (hold it down with your spatula if needed). Leave it be as it starts to puff up. Turn over to fry the other side, then drain on a paper towel.

Serve with curry, dhal, kurma, asam pedas, etc etc... (whatever you fancy).
