Red Velvet Brownies

Bahan-bahan:

BROWNIES:
3 tbsp serbuk koko
4 tbsp (2 oz) pewarna merah)
2 tbsp esen vanilla
½ cawan (113 gram) butter
1½ cups gula caster
2 telur Gred A
1¼ cawan tepung gandum
½ baking powder
1/4 tsp salt

For the white chocolate buttercream frosting:
1/2 cup (8 tbsp) unsalted butter, at room temperature
2 1/2 cups powdered sugar
1 tsp pure vanilla extract
4 oz good-quality white chocolate (not chips), melted – I recommend Callebaut
1 – 2 tbsp heavy cream

To make the brownies:
Preheat the oven to 350 degrees F. Butter and flour an 8″x8″ baking pan.

In a small bowl, slowly stir together the cocoa powder, food coloring, and 1 tsp vanilla into a thick paste until no lumps of cocoa remain. Set aside.

In the bowl of a stand mixer fitted with the paddle attachment, beat together the butter and sugar on medium speed until light and fluffy, about 2 minutes. Add eggs one at a time, mixing well after each addition, then stir in the remaining 1 tsp of vanilla. With the mixer off, add in the cocoa mixture, then turn the mixer to medium and beat the two mixtures together until they are one uniform color. Slowly add in the flour and salt and mix on medium-low speed, just until combined. Do not overmix.

Remove the bowl from the mixer and stir up the batter with a rubber spatula once or twice just to ensure all of the flour has incorporated from the sides of the bowl and there isn’t anything stuck on the bottom of the bowl. You’ll want one uniformly colored (red) batter.

Pour the batter into the prepared pan and bake for 25-30 minutes or until a toothpick comes out clean when inserted into the center of the brownies. Allow brownies to completely cool in the pan on a baking rack, about 45-60 minutes. Frost brownies in the pan, cut into 12 bars, and serve, or remove the entire batch from the pan to a cutting board, cut into 12 bars, frost, and serve.

To make the frosting:
In the bowl of a stand mixer fitted with the paddle attachment, cream butter until soft and fluffy then beat in the vanilla. With the mixer on low speed, slowly add in powdered sugar 1/2 cup at a time; allow the sugar to mix in before adding the next 1/2 cup. Once all of the sugar has been added, beat on medium speed for 30 seconds and scrape down the sides of the bowl. Add in the melted white chocolate and beat on medium speed until incorporated. With the mixer on low, add in heavy cream 1 tbsp at a time and beat at medium speed until the frosting has reached your desired consistency.

Red Velvet Cake

Bahan-bahan:
Bahan A – Untuk diayak bersama.
250 gram tepung gandum – cikmin guna tepung kek
1 tsp baking powder – tak guna
1/2 tsp garam
2 tsp cocoa powder
Bahan B -campur dan kacau sebati.
240 ml buttermilk
2 tbsp pewarna merah
Pilihan kedua – sekiranya korang tak jumpa buttermilk di kedai. Usah bimbang. Campurkan 240ml susu cair dan 1 tsp cuka. Biarkan mereka sebati bersama selama 10 minit sebelum digunakan.
Bahan C -
113 gram butter
300 gram gula kastor
2 biji telur gred A
1 tsp esen vanilla
Bahan D -
1 tsp cuka
1 tsp baking soda
Topping – Cream Cheese Frosting.
227 gram cream cheese Philadelphia
227 gram mascarpone – cikmin tak dapat stok ni kat bakery sini
1 tsp esen vanilla
1 cawan gula ising
360 ml whipped cream

Cara-cara::

Pertama... baca bismillah dan selawat ke atas Nabi SAW. Moga Allah bagi kek yang kita buat jadi sedap.

Cara penyediaan buttermilk - Satukan 1 cawan susu segar + 1 sudu makan cuka. Biarkan sebentar dalam 10-15min sehingga susu jadi agak pekat. Boleh gantikan cuka dengan jus lemon atau cream of tartar dgn sukatan yang sama.
Panaskan oven suhu 170darjah celcius. Sapu loyang dengan butter.

Dalam mangkuk, satukan gula dan juga butter. Pukul hingga lembut lebih kurang 1-2minit.

Masukkan telur satu persatu dan teruskan memutar hingga kembang dan gebu.

Dalam cawan buttermilk satukan dengan pewarna merah dan kacau sebati hingga pewarna tidak berketul2.

Kurangkan kelajuan mixer, masukkan tepung berselang seli dengan buttermilk sebanyak 3 kali. (tepung,buttermilk,tepung,buttermilk,tepung)

Mangkuk kecil, satukan soda bikarbonat dan juga cuka hingga berbuih. Tuang cepat2 ke dalam adunan kek dan kaup balikkan sebati.

Tuang ke dalam loyang dan bakar selama 30-40min atau sehingga masak. Cucuk lidi dahulu untuk memastikan kek masak. Jika bersih tandanya sudah masak.

Sejukkan di atas redai kemudian belah 3 atau 4 bahagian.

Sementera menunggu kek sejuk, sediakan cream cheese frosting. Satukan creamcheese dan mascarpone cheese dan putar sehingga smooth. Masukkan pula gula dan juga esen dan terus memukul hingga smooth lagi. Sapukan setiap lapisan kek dan hias ikut suka.

Sejukkan di dalam peti ais dahulu untuk kenikmatan yang berganda. :)))
Potong dan hidangkan.

Untuk buat upcake:

*** Untuk membuat red velvet sandwich, sudukan 1 Tbsp adunan di atas kertas minyak, ratakan dengan belakang sudu menjadi leper dan bulat. Bakar selama 8-10 minit. Letakkan cream cheese di tengah dan tangkupkan.

Plain Chocolate Brownies

Bahan-bahan (8"x8"):
200gm Butter
¾ cwn serbuk koko
2 biji telur - gred A
1 cwn gula caster
½ cwn susu cair
1¼ cwn tepung gandum
1 sk Baking powder
1 sk esen vanilla


Cara-cara:
1- Cairkan butter - masukkan serbuk koko & kacau rata.
2- Dalam mangkuk lain, pukul telur & gula (guna whisk saja) sampai sebati.
3- Kemudian campurkan dgn bancuhan butter tadi, kacau sampai sebati.
4- Masukkan susu cair, kacau lagi.
5- Masukkan tepung & baking powder (kalau rajin ayak dulu) - kacau sehingga sebati & masukkan esen vanila.
6- Panaskan oven 175˚C
7- Alas loyang dgn griss paper (lebihkan 2")
8- Masukkan bancuhan coklat ke dlm loyang, bakar selama 25min - guna api atas bawah

Indonesian Walnut Butter Cake

Bahan-bahan (8x8"):
250g Butter
150g gula castor
4 biji telur (asingkan)
200g tepung gandum (or 190g +10g untukc ampurkan walnut & choc chips)
4g baking powder
30g chocolate chips (or 60g +20g for topping)
150g walnut (or 100g + 20g topping)
Vanilla essence

Cara-cara:
1. Alas & grisskan loyang
2. Cincang walnut dan bakar dalam oven 5 minit dengan suhu rendah selama 5 minit. Pastikan tidak terlebih bakar
3. Ayak tepung dan baking powder, ketepikan
4. Dalam mangkuk besar, pukul butter dan separuh dari gula, hingga kembang
5. Tambahkan kuning telur, satu persatu, dan pukul satu persatu hingga sebati
6. Masukkan adunan tepung (gunakan sudip kayu). Ketepikan
7. Dalam mangkuk lain, putar putih telur dan separuh lagi gula perlahan2 dan pukul sehingga putih telur bertanduk (bila angkat pemutar, hujungnya menitik sikit, dan putih telur jadi keras dan berkilat)
8. Tambahkan walnut dan chocolate chips dalam adunan butter
9. Masukkan putih telur dalam adunan , kacau (fold) beberapa kali sehingga sebati
10. Masukkan adunan dalam layung. Taburkan walnut & choc chips. Bakar 45-60 minit dalam oven yang telah dipanaskan terlebih dahulu pada suhu 160˚C.
